Cracking the case on eggs!

If you grew up in the 70's, you might remember a time when eggs were considered NOT good for you. And..... we were told that margarine was. 

We now know that eggs are one of the best foods on our planet. They are nutritious, packed with protein and B vitamins. I like eggs because they ARE good for you, inexpensive, easy to make, and portable.

Shopping for them is another story. I enter the supermarket, grab a grocery cart, and make my steady way past the sale bins in the front, maneuver past the produce on my right and sugary packaged beverages on my left to the end of the aisle. Then, I make sharp left and travel past the fresh meat, meat products, and cheeses finally arriving at the EGG display case. That glorious moment. I stop and stare a the gigantic case loaded with hundreds of cartons containing thousands of eggs. And there are about 20 different brands of EGGS. Dizzying I know. Okay, I knew there were white eggs and brown eggs, but this?



There are eggs galore with labels like "antibiotic free", "cage free", "pasture raised", "free range", "organic", "non GMO" and so on. So my question is which ones are the most natural (aka non-processed in my book), right? Well, you must read the labels and do your own research. I don't even think a lawyer could decipher what the labels mean. To truly know, you have to know how the FDA defines these terms. To me, cage free means that chickens are free to roam about. But wait, what is free range then? And where else would chickens be raised outdoors if not for a pasture?
